Seafood Caesar Salad with Homemade Dressing

Ingredients

  • 7 cloves of roasted garlic
  • Dijon mustard
  • Juice of ½ a lemon
  • 2 dashes of Tabasco
  • 2 free range/organic egg yolks
  • 5 anchovies in oil
  • Salt & pepper
  • Olive oil & vegetable oil

Method

  1. Roast the garlic in the oven for 20 minutes, until they are nicely caramelized.
  2. Put the egg yolks and Dijon mustard in the blender with the roasted garlic.
  3. Blend the 3 above until they are combined and smooth, about 1 minute.
  4. Put the anchovies in the blender and mix.
  5. Pour the lemon juice into the blender and mix for another minute.
  6. Put the seasoning and Tabasco sauce into the blender.
  7. Turn the blender onto a slow speed and start to pour the oil mixture into the blender, being careful not to pour too quickly.
  8. Once blended turn off the blender and stir in cheese with a spatula.

Serving Suggestion

The Caesar dressing should be served with the classic Caesar salad, but it is so delicious; it can be used as a sauce on almost any dish. Try it and enjoy.
