Greek breakfast sausage

Ingredients

  • 2 Pork sausages
  • Sun dried tomatoes
  • Fresh parsley
  • Black pepper
  • Black olives (pitted)
  • Red onion
  • Feta cheese

Method

  1. Take the sausages and run your fingers down the skin to get all the sausage mix out into a bowl.
  2. Finely chop the olives and the sundried tomatoes and place them into the bowl.
  3. Chop the red onion and put that into the bowl along with the chopped parsley.
  4. Crumble the feta cheese and put it into the mixture as well as salt and pepper.
  5. In a hot pan, fry the sausage mix with a small drizzle of oil until it is cooked.

Serving Suggestion

The Greek breakfast sausage is perfect served on a bun, topped with mayo, a slice of tomato and a fried egg. Enjoy!
